Coconut sugar is made from the watery coconut sap found inside palm trees. It is prepared by concentrating inflorescence sap, which is popularly known as ‘neera’ in Kerala. It is obtained by tapping the unopened coconut spadix. The sap is collected and heated for it to thicken and crystallize then sieved to produce fine grained sugar.Coconut sugar is brown and contains 2–3% moisture. As this sugar is plant-based, natural, and minimally processed. 


Coconut sap is nutritious fluid enriched with sugars, calcium,phosphorus,iron, minerals and vitamins such as b complex and C. It contains important phenolic compounds such as antioxidants and can be categorized as low glycemic index food.  Minerals include zinc,iron, potassium and phosphorus,phytonutrients like antioxidants, flavonoids, polyphenols are present, Inulin is present. It can be readily used in dishes as a healthier option , it is organic with caramel aroma.

One day on reading an article on the adulteration and malpractice in edible coconut oil, she thought if people are cautioned about adulteration in foodstuffs and are supplied with unadulterated food products, it would transform the entire world with the greatest wealth, health. Cold Pressed Coconut Oil is made by cold-pressing the dried coconut kernel to extract the oil. Cold-pressed coconut oil is one of purest form of coconut oil extraction, containing high nutritional properties.

What is the difference between cold pressed coconut oil and normal coconut oil?

Cold pressed coconut oil and normal coconut oil are both extracted using mechanical processes. In normal coconut oil the heat produced during crushing is high whereas in cold pressed method the heat produced during crushing is less.

Why we must use cold pressed coconut oil in our cooking?
